Sorry, because it just happened - if they do ask what firm/city you have chosen and you have not actually made that decision yet, how should you respond?

Tell them you've yet to decide but will most likely be going to market X. Be honest at this point because it doesn't hurt you and it gives them a better idea of how to screen for people who will be more likely to choose their firm. Unless you've outright lied about where you're interviewing and don't want to burn bridges. Yeah to echo this you are under no obligation to tell them anything but if you want to disclose just be honest. By way of example it would be totally appropriate to turn down a callback with Mayer Chi and tell them "I have not yet made a decision but I have an offer from Sidley that I'm likely to accept". Sub in firms/markets to fit your needs, you get the point.

It was okay, typical x2 Partner(maybe a counsel instead of a partner) and two associates. I posted earlier re: pre-OCI offers. I've received a few dings from the ~10 firms I had yet to hear back from at that point - but of the remaining firms I have yet to hear back from, there are a few that I would considering choosing over my current offers.
Is it ok to email those few firms today and let them know I have an offer expiring on X date and that I remain very interested in their firm, etc.? If this is okay, what's the best way to ask where I'm at in the process? I'm struggling with how to phrase that part of the email.

You already gave yourself the answer. "I remain very interested in your firm, but I have an expiring offer from firm X. If you are able to make a decision on my application prior to that time, I would very much appreciate the accommodation. Something like that. Don't ask where you are in the process. Just keep it short and sweet.
Communicate now with those who not only know what a legal education is, but can offer you worthy advice and commentary as you complete the three most educational, yet challenging years of your law related post graduate life.
