There are different rules for pre-OCI offers, I think. Something like 28 days past the start of OCI.

If an employer makes an offer to a law student candidate not previously employed by that employer before the beginning of the law school's on-campus interview program, that offer should not expire until at least 28 days following the first day of the law school's on-campus interview program. Employers should contact the appropriate law school(s) to determine these dates. See Part IV F above.

Then contact recruiting to reaffirm your interest and inform them about your expiring offers. You should give them at least a few days or maybe a week so they can at least consider your candidacy. If you haven't done a callback there yet then try to accelerate your callbacks.
Otherwise you'll either have to accept or risk not getting offered at one of your pending firms.

If you haven't heard from a NY firm in 2 business days or a Chi/Cali/DC firm by the end of the week following your screener you can consider your odds of getting a callback <<<<10%. It's totally possible you are on a waiting list but its unlikely and certainly important to proceed as though you are dinged.
CB to Offer time varies wildly - in NY I'd give it 4-5 business days before getting antsy, in other big markets as much as 2 weeks, and in secondaries they often do all or a large portion of their callbacks before extending offers to anyone so it can take several weeks.
To the person with pre-OCI offers you should choose the one of those you prefer (there's absolutely no reason to keep 3+ offers open for 4 weeks now, you have enough info to whittle those down) and then be up front with the one that you keep open that they are one of very few firms you are considering but you would like until [X] date to allow for you to finish callbacks from OCI firms. They should be willing to accommodate. If you are totally ambivalent between two pre-OCI firms, maybe deliver that message to both in case one is accommodating and one sticks to the 28 days - you can then decline the latter.

To cancel cbs should I email the firm or call them? i want to cancel asap to let them open up their schedule but i wont call them on a sunday

Email unless it's a CB you got by networking, then the courtesy of a call is probably better. More likely to get the news to them on a Sunday by email anyway, they won't be at their desks.

Do you cancel callbacks when you have accepted an offer only or do you also cancel if you have received an offer you would take over the place you still have a callback scheduled for?

I just said sorry but I have an offer at another firm and no longer will be seeking a callback with them, then I thanked them for their consideration and we both went on our way. It'll be easy.
