I guess I'm concerned still because the whole description by DF conflicts with my own experience - and seems borderline made up, like when he claimed to have never seen a case in discovery, despite working biglaw lit for a whole year - so I can't help but wonder if there's some serious trolling going on.

I didn't mean to say I have never done doc review, it's just not really my job for the most part. One of the cases I'm marginally involved in is reviewing docs. But we have K workers doing it all. I was going to QC, but we apparently have a staff Attorney doing it.
I've seen the results of discovery. I've just never written a document request, a motion to compel, or an interrogatory.
Some of this is probably just luck, for 6 months I was on a case that was always one month from discovery, but it never happened. But even on that case, my role probably wouldn't have been discovery.
I jumped to a new case that will probably do some discovery for a retrial.

The only substantive court things I've done is 1) write a complaint. 2) write the technical parts of an expert witness declaration.
I actually led some witness interviews because I was point man on technology in a very high tech case. But, that was very atypical. I was the only associate on the witness trip. It was 4 partners, 1 of counsel and me. A partner had to convince the client to let me even attend.
I also led expert witness and consultant meetings for the same reason. But I was flying way above my rank on that case. Not typical.
But now that the case settled, I'm back to doing absolutely nothing substantive.
