Is there a reason to try and "collect" offers? For example, can you use them to negotiate better terms like you can with acceptances during law school admissions? Or when you accept an offer to do an SA, do you basically just say "I accept" instead of trying to discuss salary, benefits (e.g., living stipends), etc.?

lol. What firm is going to negotiate with some fungible, wet fart law student to come there for the summer? You might want to get a set of offers to evaluate, you know, where you'd like to work for 3-5 years at thousands and thousands of billable hours after law school. You can (and should) also be a fatass and hit up all the offer dinners.

I had two $55 dinners one night and expensed them to different firms who were obnoxious about sharing costs. Expense everything no one cares.

Had lunch at the Palm, ordered $15 dollars of soft-pretzels at the airport, ordered salmon for breakfast via room service.
It doesn't matter what you get or how ridiculous it is as long as you stay under budget.
I think some firms give you numbers to demonstrate an example of what's reasonable. I forgot what it was--if someone has it, it'd probably help to share.
Generally--expense everything.
