So it seems as if most schools have different policies regarding the LoRs they want you to include. Some strictly say that they want you to have 2 LoRs from professors and only to include employers if you've been out of school for an extended period of time. Others are more vague and ask you to include LoRs from people who can best attest to what you would be like as a student.
I will be applying for Fall 2017 straight out of undergrad so I would probably be expected to include 2 LoRs from professors. I already have one very strong LoR from a previous professor, but honestly didn't make extremely close connections with any other professors. However I've spent the last two summers interning at an automotive supplier. As an engineering student I feel like my mentor at my internship would be able to provide a much better recommendation than a random professor who doesn't know me all that well.
So, should I seek out an additional academic LoR that will admittedly be relatively vague and weak and send my boss' LoR as a third option?
OR
Should I send the two strong LoRs I currently have and hope it doesn't bite me in the ass that only one is academic?

I'd definitely try to get another academic LOR. I think the fact you're still in undergrad and don't have 2 academic letters may look odd to the admissions people. It is never too late to get to know a professor a bit more and tell them about yourself and your goals. And if you've done good work in their class, I am sure they will oblige.

Get another professor to write you a lor. You can meet with them and discuss your goals with law

Get another professor to give you one. I've interned at the same place 2 summers in a row as well but I wouldn't get a LOR from them. It's best to get a professor to speak to your work ethic in academia.
