How long does it take for LSAC to process? Is it because they are busy right now? My school sent it on Dec. 8th.
Once my transcript rolls in, I have to purchase CAS. How long does it take for LSAC to calculate my GPA?
Will it be done by the time my Dec. LSAT score rolls in? I want to apply as soon as my score comes in...

I mean, there's no particular order in which to do it. Just everything has to be done before your reports can be sent, so may as well go ahead and get it done. From LSAC website:
So if your school sent them on the 8th then you have another week or so to go. You should probably purchase the CAS to ensure they actually process it for you, imo.You should register and pay for the Credential Assembly Service at least four to six weeks before your first law school application deadline. It takes approximately two weeks to process a transcript, letter of recommendation, or evaluation from the time it is received.
