So I took about 3 classes through my school's extension after getting my bachelor's. I took these purely for my own professional reasons, and they do not count toward bachelor's, master's, or any other post-baccalaureate degree.
Since they were for my own learning, I didn't put much effort into it, and the grades I got for each class was C+, B-, and B+, respectively. I don't want the law schools to look at this (I know they do not count toward LSAC GPA but it still leaves negative image about my academic competence).
I already submitted my transcript to LSAC for processing about a week ago, but did not add the extension courses on the institution list.
Do I have to include these to LSAC report? That would mean extra week or two to get my transcript processed by LSAC, which will delay my application...

Read the LSAC instructions. I believe the answer is yes, everything must be included. On the bright side it will not impact your LSAC GPA.

Well that is horseshit. It's not going to impact my LSAC GPA anyway, so I don't see how I would be penalized even if they end up finding out.
