Applications not "Complete"
Out of the schools that I've applied to thus far, most of them are listed as incomplete. I'm registered for the December LSAT, could this be the reason they are incomplete? I haven't called anyone to hold my application for the December LSAT score, so this makes no sense to me.

Yes, the reflection of incomplete is due to a missing component, your LSAT score. Once you have a reportable LSAT score, your application should reflect complete.

Some schools put a hold on it automatically. All you need to do is contact admissions and let them know that you'd like them to consider your app without your DEC LSAT - obviously you need to have a previous score on file though.

OP has a reportable LSAT score.
Does it say on the status checker what component(s) is/are missing? Some of them say "incomplete" for a while until the pieces of your app can be logged into their system. For instance, Michigan took a few weeks for "Complete" because of their data entering process. Your December LSAT score could be why they are incomplete, but it might be a good idea to ask the admissions office (at least one) depending upon where and when you applied. Just ask them if they hold apps as incomplete until a future test administration releases scores.

Thanks for the replies everyone. I do have a reportable LSAT score, my Oct. 2015 score. I called the school today, and they updated it for me on the spot. It now shows as complete.
But now I have another issue with the same school. The school's website status checker lists all of my LORs and Eval, but on my LSAC account under assignments, one of my LORs and my one eval for that school don't show up as being sent (no mail envelope next to it). It's been almost a week now, so I find this strange. Additionally, it showed up on the school's website, so how could it have possibly not been sent? If anyone can shed light on this, that'd be great. I've called a couple times for app questions and just today for the original issue, so I'd like to avoid calling again and becoming "that guy".

If the school says they have it and your file is marked complete, I wouldn't sweat what the LSAC site says.
