Typically, some law schools would prefer an academic letter of recommendation, especially for students who are recent graduates. Since you graduated seven years ago, other letters from individuals you have worked with or for throughout the period should be sufficient. If you believe your math professor will write you a strong letter to validate how you were as a student that will be fine as well.

You may always call the schools you are interested in applying to and asking what they suggest for your situation.
