The only schools that might care about your coursework difficulty would be HYS and even they I highly doubt would care about that. They certainly aren't going to go investigate each class on your transcript - more like what your major was and what school you attended. Take whatever classes you feel are necessary to maintain or improve your great GPA and ignore the terrible advice prelaw advisor - for some reason most prelaw advisors seem to have a terrible idea of what it takes and What Law Schools Look For when it comes to law school admissions.

I seriously doubt anyone would care enough to look into what professors you had and how easy they grade. The whole point of having GPAs and LSAT scores is that they don't want to do a detailed investigation of each applicant's academic ability. If you managed to game the system, congratulations—that's a smarter decision than taking hard professors and getting Bs.
How did you find this out? Is there a database somewhere?1. The average pre law student at my school has a 3.3

So you think that adcoms might try and match every TLSer to a real person, and then look super deep into their post history in order to do some sort of forensics on their UG transcript and see if they took what they deemed to be too many easy classes?
While this sort of neurosis is probably perfect for a tippy top law school I don't think it's a great way to go through life. Try to figure out what matters and what should be stressed out about and what shouldn't, and then align your life with that. Maybe you won't make Harvard Law Review if you do that but I guarantee you'll be a better/happier person.

Maybe poor reading comprehension on my part, the last sentence says looking on TLS comma looking up grade distributions but maybe those are two separate things. So yeah, maybe it wasn't as neurotic as I thought it was, apologies OP. But you got off topic. OP, I don't think easy classes would matter for any school so don't worry about it.
Edit: Just read your post again, where was this forensics with easy classes and shit mentioned? That sounds like poor reading comprehension to me.
You're easy to match with your posts, and yet you still got into Yale despite your TLS footprint so I think that also supports the don't worry about this stuff point. This poster is super not memorable and will quit long before even having a real post history to analyze so he/she is good there.
I guess my main thing is use common sense and don't let your neuroses be crippling. Neither are easy for law students but I think it's something that's worth saying.
