I'd do the full-time lit gig over the internship.

Obviously only you know how important the pay is to your financial situation. I don't think either work experience will make or break you in terms of law school admissions. I would take the internship if you are interested in the work itself. It could be a great learning experience and it is easier to go internship-->paralegal than vice versa.

Neither will help for admissions but the paralegal job will help for your job search when you're a law student, moreso if it's a reputable firm.

Cato is pretty baller and obviously super hard to get. If you wanna do it I'd see if the firm could handle starting you late.

I would do Cato. Especially since you have a paralegal role lined up after Cato as a back-up, seems like a win-win.

Also biglaw paralegal jobs in NYC are not really that hard to come by. You should obviously do the Cato, even if your firm won't let you postpone your start date. After the internship, you'll be an even more competitive applicant. You could almost definitely get a paralegal gig at another firm if you had to.
