Had signed up for an on campus interview in early/mid-November hoping that Sept LSAT score would make applying ED viable (it very much did not; am re-taking in December).
Do I keep this interview date and indicated that I'm hoping to apply regular decision and am re-taking in December?
Or is it strange to interview in November when I likely won't be applying until late December?

I don't know about the timing issue, but they do give you a slip to fill out that includes an LSAT score. I know they only care about the highest come admissions time, but your interviewer will glance at that before you sit down and it might color his impression of you. Keep in mind that most interviews are done by current, unpaid students. Mine was quite nice, but there's always that risk that the guy will see your score and want to think of you as an idiot (if your score is really as bad as you suggest).
Eternal advice for retakers: don't mix LSAT-prep and admissions stuff. focus on the test and staying in the right frame of mind for December.

NU interview slots get tough to obtain later in the cycle, so I'd probably just keep that one.
