Letter of Rec Question

If I am taking 2-3 years off from undergrad before I apply to law school, how many academic letters of rec will I need (while also taking into consideration I will have 1 employer letter of rec)? I know right out of undergrad law school's typical ask for 2 academic letters of rec.
