Can I update a resume if I had already sent them in?

I sent my apps + resume before my LSAT was out. I have recently been employed at a relevant field, and I was wondering if I could update the schools with a new resume.

Yes. This is very normal. Many people include an updated resume with a LoCI.

Would I send it directly through the admissions office of the respective school? or is there an application section on LSAC?

If you have already applied, any updates should be emailed to the admissions office (with the exception of updated grades transcripts and the like, which must be sent to LSAC.
