How many addendums may I write that schools will take seriously?
So far it looks like I need to write two.
Also, does a diversity statement count as an addendum or something separate?

Yep, you shouldn't send bad addenda; you should send any required/helpful addenda. A diversity statement is not an addendum unless that school doesn't ask for such an essay and you are only allowed to submit one additional "document"; in such an instance, I wouldn't submit a diversity statement and some other addendum, for example.
It is really kind of hard to give any advice without knowing what you are thinking about submitting. If it is a C&F issue or something explaining a gap in your education then yes, it is probably worth submitting if you want to pass the bar. However, if it is something about how you hadn't matured yet when you bombed your first two years of college, then those kind of addenda tend to be pretty meaningless.
