I applied REAAALLLY late in the cycle (like earlier this month), so now I'm pondering whether it would be better to sit out the year and apply for next year instead.

LSAT? GPA? what are these? And no, only go to St Thomas if you're certain you want to live and work in Minnesota and have a significant other to support you if you don't get a job.

UST: Such a waste of a gorgeous building and an amazing location. 
Unless you only want to work in Minnesota and are good at networking. Then UST is fine for free.

Your GPA is not great, but for a URM your LSAT isn't bad. You should probably be getting better offers. You should definitely sit out a cycle and retake. Bump up your LSAT even a couple and enjoy T14.
