Having submitted your application, ps, and letters of recommendation, what more can you do to show interest in that school?

Would they accept a letter of continued interest?

You can go visit the school. An admissions person I spoke to said that it can help demonstrate interest, and they certainly make note of it, though the difference it would make is very small.
