What's best to put for ethnicity if you're multi-racial?

My ethnicity is primarily built up of Irish and Chinese, what's the recommendation for putting my ethnicity on the applications? I plan on going to school in California where the schools are nothing short of either group.....

Unless you're Hispanic or black or native American, put white.

Check multiple boxes wherever applicable. It won't make much of a difference.
