One other question

What do you guys think about doing more than one optional essay?

For example, Cornell has a "Why Cornell" in addition to a "diversity statement". It isn't like Penn where it specifically says to pick one, or like Columbia that has one general supplemental spot.

Do you think it's best to try to do all "optional" points, or is one enough?

I wouldn't do all of them just to pad the app. Only do one if you have something substantive to say. A bad essay is worse than not doing one.
