Should the resume be 1 page or, is 1.5 pages ok?
I only have 1 full time year of WE but have done LOTS of volunteer work, research, internships, leadership etc in the past and wouldn't want to omit them if possible.
What do you think?

I think going over 1 page is totally credited, if it's substantive. It sounds like it is for you, so go for it.

I remember the applications I completed specifically stating that it was alright to go over a page -- they wanted you to be comprehensive.
ETA: especially if they ask you to include all your activities. Of course, some of them will make you reformat it and complete a resume for work experience and include a separate sheet for extracurriculars, etc.
