Good or bad idea?
I am wait listed at 3 schools right now. Would it be a good or bad idea to send an email to the admissions office of all 3 schools telling them about each school I am wait listed at and then telling them that I will attend whichever school pulls me off their wait list first and withdraw from the rest?

Sounds like a bad idea to me. Just send normal LOCIs, etc. There is no need to disclose that much information.

I just thought this might give a school an incentive to pick me because they would know that I will definitely attend if they let me in.

Now that the U.S. government has signed that $100 billion defense contract with Boeing for the next several years, there will be plenty of direct and residual job growth in the NW region, so attending Seattle Law isn't a bad idea at all.
