Does my EC show an interest in public interest law? Forum

My main question is: I am interning with a judge and was going to mention this in my PS to indicate my interest in public interest law. Would that be a correct statement?

I would assume so, I am just checking to make sure I don't look like an idiot on my apps.

ALSO: I was deferred ED; when should I send a LOCI and how many LOCI should I send? Also would it be acceptable and/or wise to send in a new PS if I thought my old one may have hurt me?
