Whichever you want. Your LORs are usable as long as your LSAC account isn't expired. There certainly isn't any hurry since you have ~a year until you will be applying, so whatever floats your boat.

I'd definitely let him know about it. You don't need to specifically ask for the LOR now, just tell him you're thinking about applying, ask him if he has any advice, etc. Starting a dialogue now is a great way to get a highly personalized LOR. That being said, no need to stalk him. Unless they seem to be enjoying it. They know the deal with this stuff.

Def mention it early so he can create a good one for you. I asked a few of mine a few months ago, and am still waiting on them to send it in.
