is it acceptable to ask for a deferral in order to move to the state of a law school and gain residency?

oh yeah, and of course work and save money as well.

any thoughts appreciated

Acceptable in what sense? If all you need is a year to establish residency then it seems perfectly fine. I'd confirm you end up with in-state tuition as some states have tricky rules surrounding it. If you are ok taking another year to work, then I don't see what the harm could be.
