Law School Application Deadline Extension
What does it say about the admission process when a law school extends its application deadline? Ie. they have not found good enough applicants to admit....

I think it means they are still taking applications. Depending on rank, etc they could be doing this to diversify the class by adding URM's or raise medians or for the reason you listed or more have withdrawn then they predicted. Stetson Law has extended their deadline by 15 days to April 1st because of the snow storms in the North East during February. LSAT's test dates were postponed.
