I don't think law schools will care at all.
As for insurance, they generally require you to be a full-time student. If you are part-time for spring quarter, they might ask you for a status update at the end of the spring. If you are part-time for winter quarter, you might can get away with it since you would be full-time fall and spring. It depends on the timing of when they ask for verification.
