If you presently work somewhere, what do you write in "End..
Date?" N/A? For the employment history parts, obviously.

I put "N/A" or "Present." Whichever fit/looked better.

If it only takes dates, I put the estimated month/year I was going to quit to go to law school.

I wrote "as soon as I get an acceptance and $ from you", but sometimes I wrote "present/current"

If the field didn't force/require a date I put present. If it did require a date, I put 8/2010 or 8/1/2010 since I'll most likely be leaving then to move and start school. (As above, if they show me the money!)

I left the end date blank on mine. It's obvious that means I still have the job. You can write "Present" if you want. There might be some situations where there might be ambiguity, such as having other jobs on and off during your current one. Put "present" or something like 8/01/10 (est.).
None of the apps I did required anything in the end date blank. I did have one that required me to put a date for "current address good until ___" Since I'm out of school and live in my own house with my wife and daughter, I wil live here until I move for law school. I just put 12/31/2010. They will get the idea that they can use the address for all admissions correspondence (which is why they asked).
Just think about the bigger picture. All you need to communicate is that you are still working there. It's not rocket science.
