The impact a minor will have on your career opportunities (especially if you're doing law school) will make it slightly more valuable than your favorite color.

edit> Seriously. If your minor will bring down your GPA at all, do not do it.

At least one of my minors (I've already got one in Spanish and an informal one in English) will become a double major. I came into college with a crap load of credits so I'm hitting degree requirements way before the 120 hour graduation requirement. I've taken a stats and an accounting class each already so if it's a good safety net, I might as well. Certainly has a lot more concrete benefits than English or Poli Sci. And a concrete backup seems like a nice thing to have since the prevailing opinion about law school in this thread so far seems to be "I wish I never went."

in fairness, the "I wish I'd never went" thing is part of a worldwide law student/graduate schtick where it's cool to be miserable -- but I see your position.
