Settle, arbitrate or mediate if you are in litigation but want to avoid the cost & personal trauma of an actual trial. Or practice in a transactional or administrative area of law.
Other fields to consider: Securities, Asset Management, Tax, Mergers & Acquisitions, any sort of Regulatory and Compliance work. The focus in these (and other practice areas) is to avoid conflict/court because it has very expensive consequences for clients. Also, within litigation-focused groups (like IP) there are specialists that don't go to court but are relied upon by those who do.
