You could just ask him if he is comfortable showing you the evaluation before sending it. If he is not, then you may not want to use his evaluations. If he is, then you get to see what's in it. I believe you waive your right to see the evaluation/LOR through the law school, there is nothing barring you from seeing it from your recommender.
