It seems like most adcomms don't start reading apps until Oct/Nov...but does anyone have any idea if they generally read them in order? For example, would an app submitted Sept. 15th be read before an app submitted Sept. 30th?
I'm just trying to figure out the exact "time vs. polish" of my app - if I should start really buckling down or if I still have some time.

Yep... the general consensus is that they're read in order. If you ED to Coulumbia say ~mid september, do you think you'd get a word back before Dec. 15? this might be another silly question - but is there any benefit to applying early even if you are taking the LSAT in oct.... so they would have to wait to the end of oct for my lsat anyway?

Hmm I don't really remember. A few weeks I think. I had 2 schools originally and one of them took a lot longer than the other. Really? I sent in mine a few weeks ago and it was processed in a matter of days (like 2 or 3 tops).
