Pre-med experiences strongest motivation for law?
Honestly, I want to write about this in my personal statement. As I shadowed doctors, volunteered at homeless shelters, and took trips to foreign countries I realized that policy issues and laws underlie the inequities and injustices that I would be fixing as a doctor. Additionally, I saw a lack of traffic safety, food safety, and environmental stewardship in Honduras simply because the legal framework to enforce change was absent.
I also do chemistry research and have realized how essential intellectual property law is as an incentive for researchers to work hard and produce research that will benefit society.
Long story short, all of my pre-med experiences were the best experiences that led me to law.
I am interested in intellectual property law, but will bringing those other topics up cause them admissions committee to wonder why I don't want to do environmental law? Should I even mention a specific specialty interest?

I think this could make a very good personal statement. Just make it clear that you're interested in law because of these issues and IP, and not because you decided you didn't like pre-med.
You don't have to mention a specific specialty interest, and I think you can use those other experiences to show how your interest in law was first piqued.

Admission's committees seem to have a mind of their own. I don't think they would care if you want to do environmental law or not unless you are applying for an environmental law scholarship.
I would mention your interest in IP law, specifically patent law, but I am an Engineer, so I come from a different perspective. Maybe a 2L or 3L chemistry major would have a different perspective.
