There are places where I talk about my professors, should I state their names?

For example,

I asked one of my professors and he was initially reluctant. He told me that in the past such projects hadn’t exactly panned out well. However after meeting with him again and submitting a project outline, he finally agreed.

vs.

I asked one of my professors, [NAME], and he was initially reluctant. He told me that in the past such projects hadn’t exactly panned out well. However after meeting with him again and submitting a project outline, he finally agreed.


And Also:

After finishing introductory courses and moving onto the upper division classes, I applied to become a research assistant.

vs.

After finishing introductory courses and moving onto the upper division classes, I applied to become a research assistant for [NAME].

No. Too clunky and no one will care what their names are.

I did, but that was mainly because he was a 4-star general I was dealing/working/talking/etc with. I dont think a professor warrants a name drop, unless it's someone uber famous or relevant to law.
