I'd most likely begin with an anecdote from class and use this as a means of underlining related aspects of my background/personality, so it wouldn't be entirely about teaching.

That sounds like you're on the right track. You want to highlight what adcomms won't necessarily garner from your application; anecdotes that will showcase your personality while also adding more depth to your background is a great way to do that.
