I like option #1. It sounds very practical. You don't need to have had years of experience at this other job... you want to be a lawyer.

I had some pretty unique experiences in a corporate strategy type position at a fortune 500 company (but only 1yr+). I pulled together a lot of research in the company's main innovation area and worked regularly with lawyers alongside different business areas to look into new market opportunities. I was thinking about describing one major project that I worked on and how it makes me want to solve legal hurdles to business opportunities--ultimately as a GC. Cons- minimal WE even tho very cool job. No tangible result; project still being discussed.

Sounds interesting, focused, and relevant, but make sure it's not pedantic and try to get some of "yourself" into it, don't just dump your resume/describe the job.

The others seem okay but while "working with others" and "planning projects" are great skills to have, they aren't entirely unique and could be plugged in anywhere, in my opinion.

Just start writing drafts!

#2 and #3 are boring as all get-out, #4 could be good if it's personal but not sappy, and I'd go with #1 if I were you. Law schools tend to love interesting work experience.
