From what I understand, being Asian is not considered an ethnic minority when it comes to law schools admissions.
So is it ok to write about my experiences being discriminated against in school because I'm Asian?
OR
Should I write about having moved around a lot? open to new cultures, new perspective etc.

Don't write about discrimination unless you have some really strong examples. Think about what adcoms will remember among "discriminated against" essays. People who are not URMs or even Ms (minorities), can write DSs. So either topic is acceptable.
