I'd do 2 pages unless the school specifically mentions it should be 1. IMO 10 years out of college plus grad work gives you enough to justify the 2 pages.

Take the 2 pages. #3 and also remember to add any significant theses, publications, etc. you may have completed during your undergrad or grad work.

Unlike job resumes, law schools don't seem to mind if you carry on to 2 pages. In fact, I know that even being 2 years out of school, I filled 2 pages very comfortably with jobs, internships, and activities. At 10 years out and with grad coursework under your belt, I think schools would be surprised if you didn't spill onto the second page. I'd definitely go with Option #3 and fluff up your resume with your volunteer work/activities.
