I think you should go to Emory at sticker; 240K and a 20% chance at a job that would reasonably allow you to service the debt? (granted you live like a college student into your 40s while working 70 hrs a week)

ETA: I do hear Stetson, like most universities with headwear-themed names, has a most prefstigious law school; indeed, only 40% of their graduates do not become lawyers -- most impressive.

Without knowing more these all seem like fairly bad choices. What is the actual COA for each and what is the expected job outcome 9 months after graduation? Maybe one of these choices isn't so bad. If Stetson has decent job placement it might be an okay choice. My guess is Emory at near sticker is a very bad financial decision and potentially ruinous financially.

If deadset on practicing in Florida, then go with Stetson and hope you're in the half of people who get jobs.
You really should send in a UF & FSU app though. Who cares if you hate Tallahassee and Gainesville. Having those as options is important.
