How would you guys rank the top law schools as far as placement in music IP?
Particularly, NYU, Columbia, Berkeley (and the others).

This is kind of a silly question. There is almost no entry-level placement for music industry IP even at top schools. You will probably need to start out at a biglaw firm (in CA, NY, or other big music meccas) then work your way into this type of job after many years.
The best school for this would probably be Stanford (CA placement) followed in descending order by the schools with the best general biglaw placement.

I know Vandy isn't T14 and if you can get into any of those, by all means go. That being said, Nashville is a big-time publishing city and it is not by any means only country. I think it's definitely at least worth a look at Vandy if music publishing/IP is what you're set on.
