I have a 160 LSAT score and my International GPA was given the above average classification by LSAC. Are there any schools with reasonable employment prospects I can get into with my numbers?

what's "reasonable" to you?  
regardless, i'd focus on schools where you would get a scholarship; 160 should get you full or near full ride at some low-ranked CA schools.

And If do not consider the factor of scholarship, do I have a chance to shot USC or UCD?

I think you have a better shot at UCD than USC, but you  have a much better chance at Hastings or U of San Diego, places like that.

What is your GPA? Honestly, the only lower ranked schools worth going to are those rural schools that control their small markets; if you want to stay in that region. I don't know if there are any of those schools in CA. You could probably get a scholarship at Golden Gate, Thomas Jefferson, or some place like that in CA but I wouldn't do it. Unlikely at USC, but likely at USD if your GPA is well above 3.0. ASU & Arizona might be options to consider outside of California.
