Many schools encourage you or allow you to submit three or four letters of recommendation.
Currently, I only have two and plan on applying with only two. One is a professional rec, the other is a professor.
Question: Does it really matter?

No. This is the most over-thought, overly worried about, stupidly obsessed over part of the application.
As long as they don't say you're a dick, you will be fine.

It doesn't matter, except that some schools require or strongly recommend two LORs from professors unless you've been out of school for several years (e.g. Columbia, Berkeley, Michigan, Duke, Cornell, Georgetown, Vanderbilt).
