I had Elements with him and really liked it/him. Basically, he's full of himself, but it's 100% earned. I highly recommend taking Freedom of Speech with him. I do have a random question, through my understanding with talking to other graduate students (i.e., med), it seems like orientation week/first couple of months of school, alot of the single people end up together? Is that true in uChicago or law in general? Do people tend to date within the law school?

They do, for two reasons. First, you spend 95% of your time with other law students. I'll pm you but I'd rather post here for everyone to see. It's really not a super difficult process, and you can feel free to be honest with the admissions office, of course with a little shading one way or the other. Tell them your other offers and that you are very hesitant to make such a large financial commitment and whether they can reconsider your merit offer. I have a feeling they low ball you the first time anyway. I submitted a request to increase my scholarship offer and they bumped it up a few weeks later. In terms of what your numbers are, I would say you are in a better position if you have both numbers above median, or one above the 75th, but that it's still very possible to increase your scholarship without that. Also a large scholarship from CN or Full Ride from lower t14 > scholarship to lower t14 > full ride t20.
An acceptance to HYS is probably also a good leverage position, but I'm not exactly sure where that ranks since an acceptance to HYS means you probably already have the aforementioned stats.

Would you recommend Chicago to someone interested in public service/public interest? I currently work for federal gov and want to do the same after law school, and am very impressed w/ Chi's revamped LRAP. It seems as though very few students go into public service/govt right after graduation, relative to some other top schools, so I was wondering about the level of institutional support for non-Biglaw jobs.
