I found a site (linked below) that has some extremely useful information on employment prospects for students at different schools: mainly, the % of class getting V5, V10, V25, V50, and V100 SAs.

While useful, the information is becoming a little dated. Is there any similar ranking that uses more recent data than 2006 SAs? If not, does anybody know where I can find the data that was used for the 2006 rankings so I can create more current rankings?

You won't find that data anywhere publicly. The data were from the days on xo when hundreds of law students would be more forthcoming about their summer class demographics. Since fewer such posters are on that forum, and since–of those that are left–few wish to volunteer that information for fear of being outed, that data won't be coming soon.
