Planning to apply early in this coming cycle.
I've worked as a part time police-dispatcher throughout undergrad but will be leaving after I graduate this December. If I start working for my Uncle, a private investigator, full-time immediately after I graduate in December, could I put this on my app as W.E.? And how would schools view this? I'd like to start law school in Fall '16 so I know it wouldn't even be a full year, but thought I'd ask.

If you're working at a job at the time you're filling out your applications, you can put it on the application. If it's a future job, then there might be a way to indicate that you've been hired to start on Date X, but don't actually have the experience yet. If you don't start the job until December, you will have already submitted your law school apps (or be about to submit ASAP).
Schools would probably view working for a PI as interesting, but it won't change your odds of admission. Maybe if there was another candidate that was identical in every way, except they had no work experience, or really boring work experience, you might get the tiebreaker.
