Questions about applications

Two questions:

-As I am completing applications, I've noticed that there are many optional fields. E.g. Permanent country, native language, ethnicity, LGBT status, and economic status.
Do you think it will hurt to leave a lot of these questions unanswered?


-Regarding the following question:
Has your education in college, university, or professional school been interrupted for one term or more for any reason?
Would you consider an internship program offered by school an "interruption"? During this internship, no class was taken. I don't think it is, but just wanted to check.

If you weren't getting school credit for this internship, I would write a short addendum to explain the gap (since it wouldn't be obvious from your transcript).
