How should I note this on my resume?
I was going to add a note next to the dates saying "Employment was intermittent." Would that be ok?
I don't even think you need to mention that it was intermittent. Just list the start date and end date, and don't exaggerate your responsibilities or experience. Your resume is sort of like a brief. It's a persuasive document, not an objective piece of writing. You want to highlight everything that looks good; anything that looks even remotely bad is just wasting space for something else that could be looking good. No need to marginalize your work experience with an express disclaimer on the resume.
