assuming GPA equality, it can only help. I would argue that in that impossible "all things being equal" scenario the person with the unconventional, interesting major would get the bump over the poli sci major because of the sprinkle of diversity it would add - I was told by admissions that my theatre background was part of the reason I got offered the $$$ that I did. The important thing, as has been stated, is to major in something you're passionate about - ideally it should say something about who you are and what you care about.

Also, I'm not buying that "knowledge versus skill based" majors. Unless you're in a conservatory program, artistic majors pretty much anywhere are going to devote, at most, half of the curriculum to skill developing classes; at least half, if not all, are devoted to history and theory. becoming an expert in any subject is a skill, and getting a degree in a subject requires knowledge.
