Right now I have 165, 168, and a cancel with a 3.76 lsac gpa.
I'll be applying to Columbia through UCLA but I'd love to end up in the NY area.
Would applying ED to Columbia or NYU be a good idea? If so, which school should I ED to?

No it wouldn't. Retake the LSAT. If you don't improve go to Cornell which is cheaper

why not retake and get a 170 and have your pick of the upper t-14s?

Do not ED to Columbia or NYU. You lose the ability to consider appealing offers from other schools, you lose leverage in negotiating scholarships, and the advantage is negligible (if it even exists).
I applied ED to NYU and got in. Every piece of what I described above happened to me -- I realized I had a strong interest in another school but was locked in, it was very difficult to negotiate my aid package, and everyone else with my numbers applying RD got in anyways.
Only ED if a) sticker is not a problem (huge trust fund, independently wealthy, etc.), and b) you are absolutely sure, beyond a shadow of a doubt, that you want to attend that school more than any others.
