First time long time
Ended up with a 162 for June, going into my senior year my GPA will be 3.04-3.07 . I can graduate a semester early this fall if I want to, would this help my chances?
When I apply my GPA will be 3.04-3.07, but after the fall semester I believe I can reach 3.1-3.14.
My softs include a brief time in student government and an internship in the state of Florida Headquarters for a presidential campaign, also worked on the staff for a presidential debate, if that means anything.
I want Florida, how do I look, and where else should I be applying?

Don't graduate early. Take gut classes second semester and bump the GPA even more. It'll help if you get on WLs, or schools drag their feet making a decision on you. No adcom will be impressed that you graduated early with a 3.1 GPA; if anything it'll hurt you.

Apply to UF, FSU, and any other regional school in a market you would like to practice in long term that has a median of 162 or less.
3.1 won't get you in anywhere you are below the last median.
Retake in October.
I agree you should not get your degree till after spring and try to get your GPA as high as possible.

Are you suggesting to retake in order to have a chance at UF, FSU, etc. or to increase my options? I definitely feel like I can improve with an October retake, but the thought of that makes me want to crawl in a hole and die.
