Do you think it's worth not accepting my spot at Michigan (must commit by April-May) and taking the June LSAT to potentially do better next cycle? I'm also concerned about the applicant pool growing next year and making the cycle more competitive across the board.

I just got a Fulbright fellowship. Just curious, if I reapplied after a gap year doing Fulbright would it increase my chances at schools (without retaking the LSAT), or would it not really matter?

Your cycle would look exactly the same unless you improve your LSAT.
